Baked beans

I love to make this recipe when i have left over roast or steak. I use the crock pot method.

  • 1 (15 ounce) can pork and beans
  • 1 (15 ounce) can pink beans, rinsed, drained (I substitute pinto beans when I can’t find pink beans)
  • 1 (15 ounce) can kidney beans, rinsed, drained
  • 1/2 lb bacon
  • 16 ounces ham, cubed (optional)
  • large green pepper, chopped you can also use the red and yellow ones..makes it prettier :)
  • medium onion, chopped
  • 1 jalapeno pepper ( i do not like them to hot so i only use 1/4 to 1/2 jalapeno)
  • 1/2 cup brown sugar
  • 1/2 cup barbecue sauce ( i use 1/4 gates BBQ sauce and 1/4 cup Sweet baby Rays BBQ sauce)
  • 2 garlic cloves, minced

Directions

  1. Cook and chop bacon.
  2. Combine all ingredients in a large Dutch oven (or crockpot if using that). Mix well.
  3. Simmer on the stove, over a camp fire, in the oven (at 350), in the crockpot, or on the grill (medium heat) until the vegetables are soft (at least an hour).
  4. You should stir often (unless you’re cooking in the oven or crockpot), to prevent sticking on the bottom of the Dutch oven. Stir lightly, you don’t want to mash the beans.
 

Yummy Bread pudding June 20, 2008

BREAD PUDDING

  • 6 slices day-old bread
  • 2 tablespoons butter, melted
  • 1/2 cup raisins (optional)
  • 4 eggs, beaten
  • 2 cups milk
  • 3/4 cup white sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
 

DIRECTIONS

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Break bread into small pieces into an 8 inch square baking pan. Drizzle melted butter or margarine over bread. If desired, sprinkle with raisins.
  3. In a medium mixing bowl, combine eggs, milk, sugar, cinnamon, and vanilla. Beat until well mixed. Pour over bread, and lightly push down with a fork until bread is covered and soaking up the egg mixture.
  4. Bake in the preheated oven for 45 minutes, or until the top springs back when lightly tapped.
 
VANILLA CREAM SAUCE:

 

2 c. milk (part cream)
1 egg, beaten
1/2 c. sugar
3 tbsp. flour
1 tbsp. vanilla flavoring

 

Mix first 4 ingredients and heat to a boil, add vanilla. Pour over baked pudding. Garnish with cinnamon and sugar mixed.

It is that fun time of the year when i have to argue with the youngest about getting his hair cut for summer.  Ok, I admit i really think he looks cute with it a bit shaggy. Seems to be the style with the kids these days.. You know the one…I NEVER comb my hair look. So after a few weeks, i finally talked him into it. He will appreciate it when he goes to Scout camp and it is 110 degrees… he would never admit it, but trust me he will be much happier.  Hubby did the honors since we could not find a barber on the fly. So Dave gave him the high and tight look.

9 Million Animals are killed in shelters each year becasue NO one wants them! How sad is that?

 

 

I admit that I frequent the local animal shelter just to pet the animals even though I know I can not take them home with me. I stop at each cold concrete cage no matter how loud and mean they seem. I place my hand on the metal bars so they can lick it. I talk to each one as if it were mine, telling them what a handsome boy or pretty girl he/she is. Some are skinny and looking pretty bad, others are scared and shake almost uncontrollably. Some just lay there and others want you to KNOW they are there. They look confused, scared and unloved.  When I say it breaks my heart, What I mean is I feel a lump in my throat and a stab in my chest. There are times I get tears and just want to cry. I look in the sad eyes and wonder what they must be feeling and thinking.  One might ask ” why do you do it if it makes you so sad” and I have no answers except I feel somehow, some way, maybe they will sense I cared and feel happy for a moment before they are NEVER adopted or worse put to sleep. It feels like a mission of mine in a weird type of way.  I am also involved in CASA for abused children but that is a whole different post for another day. I kind of view them as the same, the voiceless! Used, abused, and thrown into society with no choice of their own.

 Please help me spread the word. And NEVER NEVER purchase a puppy from a pet store! It only adds to the growing number of dogs in the world that become “unwanted” and end up in shelters to die. Even if your not in the market for a dog, please visit this site and educate yourself  knowing the facts can help stop this sad reality, you never know when you will be able to share the info with someone and save 1 dog or even a  1000

BAD Hair June 10, 2008

Ok so this is my first Photo Hunt picture. Oldest son is going to probably hurt me for this one… It was taken several years ago… we sent it to the lady that cuts his hair which is also our neighbor, she loved it. I think the idea is to get a picture for the photohunt the week you do it or something like that…but oh well.. I break rules…ALOT

 

 

 

 

How does your garden grow June 10, 2008

Thunderstorms are one of my favorite parts of spring, the other favorite part is my flowers.  Things are finally starting to fill in, I love the burst of color when I open the front door in the morning.  Most people know that I love to spend time in my gardens weeding and grooming my yard. Most of the time, I find it VERY relaxing, it gives me time to reflect on things in my life.  Over the years I have worked out many issues in my life in the garden.  Sometimes my flowers were the only ones that knew my REAL feelings.

Oddly enough there were times when I went out to work in my gardens, and the things that were bugging me the most always seemed to come to mind.    Some years, my gardens were splendid and  everything seemed to flourish and other years it looked so-so.   I started to pay more attention to this and realized there were times I was all but choking my poor flower babies because I was angry and upset about something,  no wonder there were plants that never made it, may they all rest in peace among the flowers in heaven.  This year was a BIG year of weeding in my life,  I tended to the things and people (person)  that were hurtful to me in my life and you know what, my flowers have never looked better.

Why in the freak can I not figure it out? I have tried to post a picture to this friggen thing 2 times and all I get is “error on page”…WTF do they have blogs for idiots? I think I want to join. Never having a blog before and not really spending much time on blogs I feel like a 3rd grader could do a better job… I must conquer the Blog, I must conquer the Blog!
